Instructions

Prepare the crust

  1. Sprinkle gelatin over 1½ tsp cold water and let sit 3–5 minutes. Add 1½ tsp warm water and stir until dissolved.

  2. In a bowl combine milk powder, egg white powder, and sea salt.

  3. Mix in half of the butter and all of the tallow (or lard) until well blended.

  4. Mix in the rest of the cold butter cubes until a chunky dough forms.

  5. Stir in the egg yolk and dissolved gelatin until just combined.

  6. Form into a disk and refrigerate 30 minutes.

  7. Roll between two sheets of parchment to about ¼ inch thick.

  8. Place the rolled dough in the freezer for 5 minutes, then transfer it onto the pie before baking.

Prepare the filling

  1. Preheat oven to 350°F (175°C).

  2. Sprinkle gelatin over 2 tbsp of the bone broth and let sit 3–5 minutes.

  3. Heat butter or tallow in a skillet over medium heat. Add ground beef and cook just until browned, breaking it into small pieces.

  4. Pour in the rest of the bone broth and simmer 2–3 minutes.

  5. Stir in the bloomed gelatin until fully dissolved.

  6. Stir in the heavy cream and salt. Simmer 2–3 minutes until the sauce becomes slightly thick and coats the meat.

  7. Stir in cream cheese or sour cream until smooth.

  8. Let the filling sit 10 minutes before adding the crust so the gravy thickens slightly.

Assemble the pie and bake

  1. Before placing the crust on the pie, lighly sprinkle the filling with 1 tsp milk powder.

  2. Place the crust over the cooled filling.

  3. Trim excess dough and gently press along the rim of the dish and cut several small vents in the crust to allow steam to escape.

  4. Brush the surface with melted butter for color.

  5. Chill the assembled pie for 10 minutes in the refrigerator.

  6. Bake at 350°F (175°C) for 10 minutes.

  7. Reduce temperature to 325°F (165°C) for 30 to 35 minutes, until the crust is golden and the filling is bubbling.

  8. Allow the pie to rest 15 minutes before slicing so the filling can set.
