STEP 1: Sauté the Chicken

Set Instant Pot to Saute (Normal) mode.

Add butter or ghee to the pot.

Season the chicken with sea salt and place skin-side dwon. Brown for 7-8 minutes per side. Remove and set aside.
STEP 2: Pressure Cook

Pour chicken bone broth into the pot, scraping up any browned bits.

Return chicken to the pot, skin-side up.

Cancel Sauté mode, lock lid, and set Instant Pot to Manual/Pressure Cook – High for 15 minutes.

Allow 5-minute natural release, then quick release remaining pressure.
STEP 3: Make the Egg-Cream Mixture

While the chicken cooks, whisk egg yolks in a medium bowl.

Whisk in heavy cream or yogurt until smooth.
STEP 4: Temper & Finish

Remove chicken from the pot and set aside (keep warm).

Ladle about ½ cup hot broth from the pot into the egg-cream mixture slowly, whisking constantly to temper.

Switch Instant Pot to Sauté (Low) mode.

Stir the tempered egg-cream mixture back into the pot. Heat gently, stirring, until broth is creamy — do not boil.

Return chicken to the pot or plate individually.

Ladle creamy broth over the chicken and garnish with feta or parmesan if using.
