Instructions

STEP 1: Make the "Noodle Sheets"

    1. Preheat oven to 400°F (205°C).
    2. In a blender or food processor, combine eggs, cottage cheese, shredded mozzarella, and pork rind powder. Blend until smooth.
    3. Line a ceramic baking sheet (approx. 10x15") with parchment paper or use a 100% platinum silicone square baking sheet (e.g. Silikomart brand) and spread the mixture evenly into a thin layer.
    4. Bake for 20-30 minutes until set and lightly golden.
    5. Let cool slightly, then slice into sheets to fit your baking dish.

STEP 2: Prepare the Meat Sauce

    1. In a skillet over medium heat, cook ground beef until browned. Drain excess fat if desired.
    2. Season with sea salt.
    3. Stir in cream cheese until the ground beef is fully coated. Add water or heavy cream as desired to enrich the creaminess. Remove from heat.

STEP 3: Assemble the Lasagna

    1. In a greased baking dish, layer noodle sheet → meat sauce → shredded mozzarella → repeat until all ingredients are used, ending with cheese on top.
    2. Sprinkle parmesan cheese over the top layer for extra flavor and browning.
    3. Optionally add bacon or ham pieces for an additional layer of texture.

STEP 4: Bake

    1. Bake at 375°F (190°C) for 30 minutes until cheese is melted and bubbly.
    2. Let rest for 5–10 minutes before slicing for cleaner layers.
