Instructions

STEP 1: Make the Flavored Cream Pearls

  1. Bloom the gelatin: Sprinkle gelatin evenly over 2 tablespoons of water and let it sit for 1–2 minutes to bloom.

  2. Warm the liquid: In a small saucepan over low heat, gently warm the cream and remaining water until steaming (do not boil).

  3. Dissolve: Stir in the bloomed gelatin until completely dissolved and smooth.

  4. Mold: Pour the mixture into a circular mini ice cube tray or a shallow dish.

  5. Chill: Refrigerate for at least 2 hours, or until firm. Remove from the mold, or cut into small cubes if set in a dish.

Alternate Step 1 – Make Plain Gelatin Pearls

  1. Bloom the gelatin: Sprinkle gelatin evenly over 2 tablespoons of room-temperature water and let it sit for 2 minutes to bloom.

  2. Dissolve: Pour warm water over the bloomed gelatin and stir until it is completely dissolved and smooth.

  3. Optional coloring: Add a few drops of natural food coloring if you’d like a darker, bubble tea–style pearl color.

  4. Optional flavoring (flex carnivore): For a sweeter variation, stir in a touch of raw honey or a drop of vanilla extract.

  5. Mold: Pour the mixture into a circular mini ice cube tray or a shallow dish.

  6. Chill: Refrigerate for at least 2 hours, or until firm. Remove from the mold, or cut into small cubes if set in a dish.

STEP 2: Prepare the Tea Base - Eggnog-Style

  1. Warm gently: In a saucepan over medium-low heat, whisk together the cream, milk, and egg yolks until smooth.

  2. Thicken: Stir constantly until the mixture lightly thickens and coats the back of a spoon — do not allow it to boil.

  3. Finish & cool: Remove from heat, stir in the nutmeg and optional sweetener, then let cool to room temperature before transferring to the refrigerator to chill.

Alternate Step 2 – Prepare the Traditional Black Tea (caffeinated or decaf)

  1. Steep: Brew the black tea in hot water for at least 10 minutes for a strong infusion, then allow it to cool completely.

  2. Combine: Stir the cooled tea together with the cream until smooth.  As an option, add a touch of raw honey, if desired.

STEP 3: Assemble the Bubble Tea

  1. Layer: Place the prepared pearls into the bottom of your serving glass.

  2. Pour: Gently add your chosen base mixture (tea, eggnog-style, or cream).

  3. Serve: Enjoy immediately with a wide straw or a long spoon.
