Carnivore Bubble Tea
This playful twist on bubble tea swaps traditional tapioca pearls for protein-rich gelatin pearls, creating a chewy base that’s both satisfying and carnivore-friendly. Pair the pearls with one of three indulgent bases — creamy, eggnog-style, or tea-infused — for a refreshing, customizable treat. Whether you prefer a rich custard note, a lighter cream base, or a subtle tea flavor, this recipe delivers a fun and nourishing take on a classic favorite.

Instructions
STEP 1: Make the Flavored Cream Pearls

Bloom the gelatin: Sprinkle gelatin evenly over 2 tablespoons of water and let it sit for 1–2 minutes to bloom.

Warm the liquid: In a small saucepan over low heat, gently warm the cream and remaining water until steaming (do not boil).

Dissolve: Stir in the bloomed gelatin until completely dissolved and smooth.

Mold: Pour the mixture into a circular mini ice cube tray or a shallow dish.

Chill: Refrigerate for at least 2 hours, or until firm. Remove from the mold, or cut into small cubes if set in a dish.
Alternate Step 1 – Make Plain Gelatin Pearls

Bloom the gelatin: Sprinkle gelatin evenly over 2 tablespoons of room-temperature water and let it sit for 2 minutes to bloom.

Dissolve: Pour warm water over the bloomed gelatin and stir until it is completely dissolved and smooth.

Optional coloring: Add a few drops of natural food coloring if you’d like a darker, bubble tea–style pearl color.

Optional flavoring (flex carnivore): For a sweeter variation, stir in a touch of raw honey or a drop of vanilla extract.

Mold: Pour the mixture into a circular mini ice cube tray or a shallow dish.

Chill: Refrigerate for at least 2 hours, or until firm. Remove from the mold, or cut into small cubes if set in a dish.
STEP 2: Prepare the Tea Base - Eggnog-Style

Warm gently: In a saucepan over medium-low heat, whisk together the cream, milk, and egg yolks until smooth.

Thicken: Stir constantly until the mixture lightly thickens and coats the back of a spoon — do not allow it to boil.

Finish & cool: Remove from heat, stir in the nutmeg and optional sweetener, then let cool to room temperature before transferring to the refrigerator to chill.
Alternate Step 2 – Prepare the Traditional Black Tea (caffeinated or decaf)

Steep: Brew the black tea in hot water for at least 10 minutes for a strong infusion, then allow it to cool completely.

Combine: Stir the cooled tea together with the cream until smooth. As an option, add a touch of raw honey, if desired.
STEP 3: Assemble the Bubble Tea

Layer: Place the prepared pearls into the bottom of your serving glass.

Pour: Gently add your chosen base mixture (tea, eggnog-style, or cream).
