Carnivore Greek Chicken Stew (Stovetop Version)

STEP 1: Sauté the Chicken

  1. Heat butter or ghee in a large pot over medium heat.

  2. Season chicken with sea salt and place skin-side down in the pot.

  3. Brown for 8 minutes per side, then remove and set aside.

STEP 2: Slow Cook

  1. Pour chicken bone broth into the pot, scraping up any browned bits.

  2. Return chicken to the pot, skin-side up.

  3. Cover and simmer gently for 45–50 minutes, until chicken is cooked through and tender.

STEP 3: Make the Egg-Cream Mixture

  1. While the chicken cooks, whisk egg yolks in a medium bowl.

  3. Ladle in ½ cup of the hot broth from the pot very slowly, whisking constantly to temper the eggs so they don’t scramble.

STEP 4: Finish

  1. Reduce heat to low.

  2. Slowly stir the tempered egg-cream mixture back into the pot.

  3. Gently stir until the broth turns creamy — do not boil once the eggs are added.

  4. Adjust salt to taste.

  5. Ladle stew into bowls, ensuring each serving has tender chicken pieces.
