Carnivore Greek Chicken Stew (Instant Pot Version)

Instructions

STEP 1: Sauté the Chicken

  1. Set Instant Pot to Saute (Normal) mode.

  2. Add butter or ghee to the pot.

  3. Season the chicken with sea salt and place skin-side dwon. Brown for 7-8 minutes per side. Remove and set aside.

STEP 2: Pressure Cook

  1. Pour chicken bone broth into the pot, scraping up any browned bits.

  2. Return chicken to the pot, skin-side up.

  3. Cancel Sauté mode, lock lid, and set Instant Pot to Manual/Pressure Cook – High for 15 minutes.

  4. Allow 5-minute natural release, then quick release remaining pressure.

STEP 3: Make the Egg-Cream Mixture

  1. While the chicken cooks, whisk egg yolks in a medium bowl.

  2. Whisk in heavy cream or yogurt until smooth.

STEP 4: Temper & Finish

  1. Remove chicken from the pot and set aside (keep warm).

  2. Ladle about ½ cup hot broth from the pot into the egg-cream mixture slowly, whisking constantly to temper.

  3. Switch Instant Pot to Sauté (Low) mode.

  4. Stir the tempered egg-cream mixture back into the pot. Heat gently, stirring, until broth is creamy — do not boil.

  5. Return chicken to the pot or plate individually.

  6. Ladle creamy broth over the chicken and garnish with feta or parmesan if using.
