  1. Preheat: Set oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Whip egg whites: In a medium bowl, beat egg whites until stiff peaks form.

  3. Mix dry ingredients: In another bowl, combine ground pork rind powder, baking soda, and optional boosters (egg white powder and collagen).

  4. Cut in butter: Grate or finely chop frozen butter. Fold it into the dry mixture until it resembles coarse crumbs.

  5. Activate leavening: Stir in the kefir or sour cream thinned with water/bone broth to activate baking soda.

  6. Combine: Gently fold the dry mixture into the whipped egg whites until just combined. Do not overmix — this helps retain air for rising.

  7. Shape: Scoop dough into 5 round mounds and place on the prepared baking sheet. Keep them fairly tight and tall rather than spread flat.

  8. (Optional) Chill: Refrigerate shaped biscuits for 15 minutes to keep the butter cold.

  9. Bake: Place in the oven at 400°F for 5 minutes, then reduce heat to 375°F (190°C) and bake another 10–13 minutes, until golden brown and set.

  10. Rest: Cool for 5 minutes before serving.
