Carnivore Shortbread Cream Cookies

Buttery shortbread cookies topped with a smooth mascarpone cream filling. These elegant bakery-style treats have a crisp, tender cookie base and a creamy center that pairs beautifully with the rich dairy flavour of the shortbread. They're simple to make, visually impressive, and a wonderful option for entertaining guests or enjoying with a hot beverage.

Instructions

Make the cookies

  1. Preheat the oven to 325°F and place the platinum silicone mold on a baking tray for support.

  2. Add the softened butter to a mixing bowl and beat until smooth and creamy.

  3. Add the milk powder, egg white protein powder, and sea salt. Mix until a soft dough forms.

  4. Divide the dough evenly among the 6 wells.

  5. Press the dough firmly into the mold, ensuring the center depression remains visible and well defined.

  6. Place the mold in the refrigerator for 15 minutes before baking.

  7. Bake for 14-16 minutes, or until the edges are lightly golden.

  8. Remove from the oven and allow the cookies to cool in the mold for 20 minutes.

  9. Carefully remove the cookies from the mold and transfer to a cooling rack.

  10. Allow the cookies to cool completely before filling.

Prepare the Mascarpone Cream

  1. Add the cold water to a small bowl and sprinkle the gelatin over top. Allow it to bloom for 2-3 minutes.

  2. Warm the bloomed gelatin gently until fully dissolved. Set aside to cool slightly.

  3. Add the mascarpone and heavy cream to a mixing bowl.

  4. Beat on low speed just until smooth and fluffy.

  5. Slowly drizzle in the dissolved gelatin while mixing.

  6. If using the Flex Carnivore version, add the vanilla and honey and mix briefly.

  7. Transfer the filling to a piping bag and refrigerate for 10-15 minutes if needed for firmer piping.

Assemble

  1. Pipe the mascarpone cream into the center depression of each cookie using a decorative star tip or your preferred piping tip.

  2. Refrigerate for 30 minutes to allow the filling to fully set.

  3. Serve chilled or allow to sit at room temperature for 5 minutes before serving.
