Carnivore Breakfast Sandwich

Hearty, satisfying, and entirely animal-based, this carnivore breakfast sandwich starts with a warm, savory bun made from pork rinds, egg, and a tangy dairy touch to keep it light and tender. Once pan-cooked, the bun is filled with crispy bacon, a freshly fried egg, and optional melted cheese for a rich, indulgent start to your day. Perfect for busy mornings or a leisurely brunch.

Instructions

STEP 1: Make the Bun

  1. Mix the batter: In a small bowl, combine pork rind powder, egg, baking soda, sour cream (or kefir), and salt if using. Mix until even.

  2. Cook the bun - stove method: Spoon batter onto a ceramic non-stick pan, cover and cook until firm, flipping once.

  3. Cook the bun - oven method: Preheat to 350°F (175°C), spoon batter into a greased ramekin or mold, and bake for 12–15 minutes until set and slightly golden.

  4. Cool and slice: Let the bun cool slightly, then slice in half horizontally.

STEP 2: Pepare the Filling and Assemble

  1. Cook the bacon: In a skillet over medium heat, cook bacon until crispy. Remove and set aside.

  2. Cook the egg: In the same skillet, fry the egg to your liking. Add cheese on top in the final minute if using, allowing it to melt.

  3. Place bacon on the bottom half of the bun, add the fried egg (and melted cheese if using), then top with the other bun half.

  4. Serve warm and enjoy!
