STEP 1: Make the Base

  1. Preheat oven to 350°F (175°C). Line a 8x8-inch baking pan with parchment paper.

  2. Separate eggs, placing yolks in one bowl and whites in another.

  3. Beat egg whites until stiff peaks form; set aside.

  4. In a saucepan, brown butter until golden and nutty. Remove from heat and stir in cream, bloomed gelatin, collagen, vanilla, honey, and salt. Whisk in yolks until smooth.

  5. Stir in egg white powder (or pork rind powder) until combined. Batter should be thick but pourable.

  6. Gently fold whipped egg whites into yolk mixture until incorporated.

  7. Pour into prepared pan and bake 30–35 minutes, until center is set and a knife comes out mostly clean.

    Cool for 15 minutes.

STEP 2: Make the Topping

  1. Bloom 1 tsp gelatin in 2 tbsp warm water.

  2. Whip cream until soft peaks form.

  3. Stir bloomed gelatin into Greek yogurt while still warm, mixing thoroughly.

  4. Fold whipped cream into yogurt mixture, adding vanilla and honey if using, until smooth.

STEP 3: Assemble

  1. Cut the baked cake base to fit snugly in the bottom of the mold (or keep in pan).

  2. Spread yogurt-cream topping evenly over the base.

  3. Chill for 2–3 hours in the refrigerator until fully set.
